Wildflower Sparkling Mead 75cl

The driest Sparkling Mead in the range, produced from the spring Wildflower honey. Produced from the spring crop of honey, is the most comparable with a dry sparkling wine or champagne. A dry start with a smooth honey finish.

Honey: Spring Wildflower Honey gathered by the bees of Northumberland Honey Co. Including dandelion, hawthorn and white clover predominantly, a poly floral Wildflower Honey.

Dryness/ tasting: Brut with 5g/l residual sugars, a lovely well balanced acidity brings a dry start with a smooth honey finish on the palate. Lovely, beeswax, pollen and haymeadow aromas on the nose.

Wildflower Sparkling Mead was the first traditional method Sparkling Mead produced in the UK. Now both 75cl and a handy sized 37.5cl bottles available to buy online.

 

Tasting Notes

Light in colour, with delicate floral and honey aromas, with a dry start and smooth savoury finish, will keep you coming back to the glass. A real hit with beekeepers with the rich aroma of beeswax, propolis and fresh pollen, reminiscent of opening up a beehive in spring.

Food Pairing

Wildflower Sparkling Mead, with it’s delicate bubbles and Champagne like style, goes very well as an aperitif, with small tasting plates/ tapas, mild cheeses such as the Northumberland Cheese Company sheeps milk cheese – Redesdale. Equally has been used as an environmentally conscious alternative to Champagnes and Prosecco as reception drinks, toasts for weddings etc. Especially given the link the word honeymoon being derived from mead, Wildflower Sparkling Mead is a real treat for an extra special Sparkling.

    Forget Champagne and Prosecco, this is where a sparkling is at. Light colour, fine bubbles, easy to drink and of course dry not too sweet. It’s a beehive in a glass.

    I was first introduced to Luke & Suzie and Northumberland Honey, during a Zoom meeting with my local Beekeeping Association. Prior to the session, I thought I do a bit of research and bought a bottle of their Wildflower Sparkling Mead.

    The bottle came extremely well packaged within its own cardboard bottle cradle nestled in eco recyclable packaging within their own branded parcel. I do like their logo and attention to the aesthetic detail. Lots of thought has clearly been invested the ‘first impressions’ – the parcel, the bottle, the cork and foil. It’s a joy to open .

    To the main event – After carefully popping the cork (I don’t want to waste a drop), the mead is crystal clear liquid. After the de-corking flurry, it is finely sparkling and pours perfectly into a champagne flute. Those fine sparkles tickle the pallet leaving sweet floral honey notes all over my taste buds. A unique feeling of honeyed warmth washing over me as the mead works its magic ! Perfect for wooing a lover or enjoying on your own !!

    I was so impressed with Luke and Susie and their ethos supporting honey bees and the all important provenance of their products, I decided to buy a range of their honey and mead. I will try to add a review of each as I gradually munch through these excellent products.

    I came into the shop for a browse and was offered some samples of the wines offered. I chose this one as I like a dry wine. I kept this for a housewarming as it quite an extravagance! I really like this and would buy again for a special occasion.

    I saw Robson Green visit the Northumberland Honey Company in his TV programme and was very impressed by Susie and Luke’s efforts in supporting honey bees. I have tried mead before but always found it a bit too sweet for my taste – my drink of choice is Champagne but I was tempted to order some when I saw how light and sparkling it appeared.

    I therefore ordered a bottle of the Wildflower Mead, which was delivered very quickly and was superbly packaged in its own cardboard cradle.

    I really was delighted with the mead which was a beautiful pale golden colour with lots of bubbles and not too sweet. I was so impressed that I have just ordered another bottle, along with some honey and a bottle of Honey Beer to try. If you like a light, fairly dry and sparkling wine with a distinct honey flavour, then I highly recommend this to you. I will definitely be giving this to friends as presents on special occasions.
